Peanut Butter Banana Bread

You may be seeing a theme in my baking... peanut butter! Once I found out that my boyfriend loves peanut butter I have gone crazy with making peanut butter recipes. Mainly though, so I won't be the only one eating these baked goodies. So when I found a peanut butter banana bread recipe I figured he would love it. Here is the recipe:

What you need:

  • 1 and 1/2 cup mashed ripe banana 
  • 1/3 cup plain fat-free yogurt
  • 1/3 cup creamy peanut butter
  • 3 tablespoons butter, melted
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 6 and 3/4 oz all-purpose flour (about 1 and 1/2 cups)
  • 1/4 cup ground flaxseed
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 2 tablespoon chopped dry-roasted peanuts

Preheat oven to 350 degrees. 

Combine bananas, yogurt, peanut butter, butter, and eggs in a large bowl. Beat with a mixer at medium speed. Add granulated and brown sugars. Beat until blended. 

Combine flour, flaxseed, baking soda, salt, cinnamon, and allspice in a small bowel. Add flour mixture to banana mixture. Beat just until blended. Stir in nuts.

Pour batter into a 9x5 inch loaf pan coated with cooking spray. Bake at 350 degrees for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Remove from oven and cool 10 minutes in pan on a wire rack. Remove bread from pan and cool.

I didn't add the flaxseed or the nuts because I didn't have them at the time but I thought it tasted really good. Surprisingly my boyfriend didn't like it as much as my other, normal banana bread recipe. Go figure...

This recipe also came with a peanut butter glaze that I didn't make. But here it is if you would like to make it. 

What you need:
  • 1/3 cup powdered sugar
  • 1 tablespoon 1% low-fat milk
  • 1 tablespoon creamy peanut butter
Combine powdered sugar, milk, and 1 tablespoon peanut butter in a small bowl, stirring with a whisk. Drizzle glaze over bread.
