Cheesecake Cupcakes

I'm sure you have figured out by now that I love desserts or anything sweet. Unfortunately, Chris does not feel the same. Usually he gets a craving for sweets when we have nothing, but when we do have sweets he doesn't want them! Go figure... all well... more for me. ; )

My most recent dessert is cheesecake cupcakes! {I adapted a recipe I found here.} Cupcakes are awesome because they are the perfect, individual size treat and they are easy to take to work {I'm trying not to eat everything... trying : ) }. I have a feeling I'm going to be making more of my favorite sweets in cupcake versions... get excited!

Here is how you make the cheesecake cupcakes:

What you need:

  • 1 1/2 cups graham cracker crumbs 
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons granulated white sugar
Cheesecake Filling:
  • 2 lbs cream cheese, room temperature
  • 1 1/2 cups granulated white sugar
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 4 eggs, room temperature

Pre-heat oven to 325 degrees F.


Crush graham crackers into crumbs. I don't have a food processor but if you do please use it. I did this step by putting the graham crackers in a one gallon ziplock bag and crushed them using a rolling pin... it worked really well!

In a smaller bowl, combine graham cracker crumbs, melted butter and sugar. Stir till well blended.

Line cupcake pan with paper liners. Press one tablespoon of the crust mixture into the bottom of each cupcake liner {you can use a small glass to press down the crumbs}.

Bake for about 5 minutes. Transfer to a cooling rack.

Cheesecake Filling:

Beat cream cheese until fluffy. Blend in sugar until smooth. Mix in the salt and vanilla. Beat in eggs one at a time, mixing well after each addition.

Spoon about 3 tablespoons of the cheesecake filling over the crust in each cupcake liner.

Bake for 22-25 minutes.

Transfer to a wire cooling rack and let cool to room temperature.

Chill in the refrigerator for at least 4 hours before serving.

Garnish as desired.

I was a bad blogger and did not take many pictures of the baking process. : (

I changed things up a bit... I split my batter in half and added about 3/4 cup semi-sweet chocolate chips to one half and left the other plain. I also had fun jazzing up the garnish.

Everyone loved them at work! Enjoy. : D
