Pumpkin Cheesecake Bars

My recent pumpkin dessert obsession has continued. I found this delicious looking recipe from The Domestic Rebel and I knew I had to try it.

This recipe is the same as The Domestic Rebel’s, so you could also get the recipe from there.

What you need:

  • 1 box cake mix
  • 1 egg
  • 2 tablespoons butter, melted
  • 2 teaspoons pumpkin pie spice

Cheesecake Layer
  • 1 package (8 oz) cream cheese, softened
  • 1 can (7 oz) sweetened condensed milk
  • 1 can (15 oz) pumpkin puree
  • 2 eggs
  • 1 tablespoon pumpkin pie spice

Preheat oven to 350°F. Grease a 13x9 inch baking pan.

Combine ingredients in a large bowl until crumbly. Gently press the crust into the bottom of the greased pan.

Cheesecake Layer
In a large bowl, beat cream cheese until fluffy. Gradually add in the milk, pumpkin, eggs, and spice until combined.

Pour the cheesecake layer on top of the crust.

Bake for 30-35 minutes or until the center is just set. Cool for an hour at room temperature. Chill in the fridge for several hours before serving.
