Six Layer Taco Dip


First, what do you think of my new blog makeover? I love it! Kim did an excellent job. She was very patient and so easy to work with. Her ability to create exactly what I wanted amazed me. If you are considering a makeover for your blog I fully recommend Kim (733design.com)!

Now on to the real subject of this post:




A little bit ago we had a potluck at work for a lady who was pregnant with her seconded child (she had her baby- a boy, Levi! Isn’t that a cute name). Apparently, you only have a baby shower for the first kid. This shows how much I know about having kids!

When I was 17 and graduated from high school I had no desire to settle down, get married and have kids. But that is just what a few of my old high school friends did. I thought they were crazy! I wanted to go to college and find myself. Which is exactly what I did and I am so glad that I did it. For me settling down after high school wasn’t the right choice but for some it is. I give them tons of credit, too! Being a parent isn’t easy.

That being said, lately I have stared to get the feeling that my maternal clock is starting to kick in. I said staring… it isn’t in full swing yet, but I want to have kids way more now then nine years ago. First, we need to get married though! (wink, wink : ),  to bad Chris never reads this). But I know when things are meant to be they will happen.

Anyhow, for the potluck I made this awesome taco dip that everyone ate right up! (I found the original recipe here). Here is the recipe:


What you need:
  • 1 package (1 oz) taco seasoning mix
  • 1 can (16 oz) refried beans
  • 1 package (8 oz) cream cheese, softened
  • 1 container (16 oz) sour cream
  • 1 jar (16 oz) salsa
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1 can (6 oz) sliced black olives, drained
  • 2 cups shredded cheddar cheese 

Layer 1: In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.




Layer 2: Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.



Layer 3: Add salsa.



Layer 4: Add chopped tomato and green bell pepper.



Layer 5: Add cheddar cheese.

Layer 6: Sprinkle with black olives.



Look at those layers, so yummo!
