{Guest Post} Lemon Butter Cookies

I am so excited to be your guest and meet all the Simple Dream & Create followers!  My name is Kat and I blog over at I Want Crazy. I think perfect can get boring and so I try and embrace the crazy, while still trying to cook, parent and love fiercely. Today I can't wait to share with you one of my favorite cookie recipes! Anytime my husband and I take a long trip anywhere I get the case of the munchies. I hate driving through fast-food or stopping at the gas station to pick up the usual bag of chips or sour candies because I am a "no-stop" kind of driver. My husband has learned to not even ask unless it's an emergency and to go to the bathroom before we leave. ;) Therefore, I like to pack something to snack on while driving. I try and be adventurous and surprise the hubby with something that he will like as well and since he loves anything lemon I whipped up a batch of Lemon Butter Cookies!


They are so easy and very quick to bake while in the midst of packing for your trip. Here's what you will need: butter, sugar, lemon, flour, salt and powdered sugar. Preheat oven to 350 degrees. First, cream one stick of butter and a heaping 1/3 cup of sugar together in a mixing bowl. Then mix in a teaspoon of lemon peel (the magic ingredient) and a pinch of salt. Once combined, slowly add 3/4 cups of flour until the dough comes together.


I just love the tiny little specks of lemon in the batter, so cute. It's also one of the best smells in the world when you start to zest the lemon!

Form teaspoon size balls and place on a greased baking sheet. Bake in the oven for 15-18 minutes. They will not spread or brown a ton so don't let them go too long or they will get too hard.
Transfer to a plate and dust with powdered sugar. If you can resist, pack them in a bag for your trip or just start to chow down!   I love anything bite-sized or small because I feel I can eat more than a couple and not feel too bad  


Now, I know you might be thinking, well i just wasted a lemon! There are so many things you can use that lemon for! I had a giant glass of water with these cookies and a slice of lemon complimented them perfectly. I also put a slice of it down the disposal to clean it up and give the house even more of an amazing smell. You also can save half of it and use it to marinate chicken for dinner or juice it over some salmon or shrimp. Never throw it out! I hope you guys enjoy the cookies and lemon as much as I did.
