Peanut Butter Mini Cheesecakes

Last week I participated in the yearly Cookie Exchange at work. I shared my hull on Instagram:

Everything was so yummy! As  you can see even though we call it a "cookie" exchange it is more of a dessert exchange. I made Peanut Butter Mini Cheesecakes because I love cheesecake and peanut butter! Here is how I made them {the original recipe is from The Girl Who Ate Everything} :

What you need: 

  • 16 Reese's peanut butter cups, I used snack size
  • 2 (8 oz) package cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/4 cup sour cream
  • 3/4 cup creamy peanut butter
  • 1/4 cup semisweet chocolate chips {optional}
  • 2 tablespoons butter {optional}

Preheat oven to 325 degrees.

Place paper liners in a cupcake pan. Place one peanut butter cup in the bottom of each liner. {Since I used snack size, I squished each cup with a spoon so it filled the bottom.}

In a large bowl beat the cream cheese and sugar until fluffy.

Add the eggs, sour cream, and peanut butter and beat until combined.

Pour batter on top of each peanut butter cup, filling each liner 3/4 of the way.

Bake for 18-22 minutes or until set.

Cool in the pan, then chill in the refrigerator for 1 hour.

{Optional} add toppings: Met the chocolate chips and butter in the microwave and stir until creamy. Drizzle melted chocolate on top of cheesecakes. Add chopped up Reese's cups, chocolate and peanut butter chips, and sprinkles. Or use whatever toppings you desire.
