Hi all, this is Week 4 of the Pinterest Challenge! This week I decided to work on the Cake Batter Truffles from Chef in Training:
What you need:
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 & 1/2 cup flour
- 1/2 teaspoon salt
- 1 cup yellow cake mix, dry
- 3 tablespoons milk, may need more
- 16 oz white dipping chocolate/almond bark
- Optional: sprinkles
In a large bowl beat together butter and sugar until well combined. Beat in vanilla. Add cake mix, flour, and salt, mix thoroughly. Beat in milk. If needed, add more milk till you achieve your desired consistency.
Roll dough into one inch balls and place on a wax paper lined cookie sheet. Refrigerate balls for ~15 minutes to firm up.
Melt almond bark in the microwave in 30 second intervals until melted. Stir in between each interval to prevent burning. Using a fork, dip the balls into the almond bark and shake off excess bark. Place truffle on to the cookie sheet and top with sprinkles. Refrigerate in an air tight container.
Makes 24-30 truffles.
They turned out excellent! All my co-workers loved them. ; )
