Vanilla Cupcakes with Peanut Butter Frosting & Chocolate Ganache {Pinterest Challenge}

Hi all, this is Week 5 of the Pinterest Challenge! This week I decided to work on the Vanilla Cupcakes with Peanut Butter Frosting & Chocolate Ganache:

What you need:

Vanilla Cupcakes
  • 1 1/2 cupcake flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1/2 cup milk
Peanut Butter Frosting
  • 1 cup peanut butter
  • 1 1/2 teaspoon vanilla
  • 2 1/2 cups powdered sugar
  • 6 tablespoons milk
Chocolate Ganache 
  • 3/4 cup chocolate chips
  • 1/4 cup heavy cream

Vanilla Cupcakes

Preheat oven to 400 degrees.

Mix flour, baking powder, and salt. Beat in butter gradually. Beat in sugar and mix thoroughly. Beat in eggs, then vanilla and milk. Beat just until mixed. 

Pour into lined cupcake pans. Bake at 400 degrees for 18 minutes or until a toothpick comes out clean.

Peanut Butter Frosting

Beat peanut butter and vanilla until blended. Add 3 tablespoons milk and sugar while beating. Add the rest of the milk and sugar and beat until smooth. If needed add more milk until frosting is the desired consistency.

Chocolate Ganache

Melt chocolate and cream in a small pot on low heat with continuous stirring.  

Makes about 15 cupcakes.

These cupcakes were delicious! My co-workers really loved them. : )
