Over the weekend I had some ripe bananas, so naturally I made banana bread! But instead of putting them in a bread pan I grabbed some cupcake liners and put them in a cupcake pan. It was the first time I made banana bread that way and I have to admit, I love the little muffins! They are the perfect serving size. So I'd thought I'd share my favorite banana bread recipe that I've been using for years with you all today!
- 2 cups all purpose flour
- 3/4 cup brown sugar
- 2 eggs, beaten
- 2-4 mashed overripe bananas (I use whatever I have)
- 1/2 cup butter, softened
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Preheat oven to 350 degrees F.
In a large bowl, combine flour, baking soda, and salt.
In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
Stir banana mixture into flour mixture. Stir just to moisten.
Fill lined cupcake pans until 3/4 full. Bake at 350 degrees for 17 minutes or until a toothpick comes out clean.
